Spending an affected coin into a new wallet output restarts that coin’s delay. Untouched coins keep their own countdown.
Illustrative basic setup. Keys, thresholds and delays can be tailored to you. In phases 2 and 3, you can choose additional independently held signers, subject to wallet-policy and signing-device limits. Keeping their keys and backups separate reduces the risk of losing every recovery route at once.
